Happy Friday!! Today I am excited to share five of my favorite simple recipes for summer. Each of these recipes is in our regular weeknight dinner rotation. They each call for fresh ingredients, most of which I am growing in my garden.

1. Gigi Hadid's Spicy Vodka Pasta
I don’t know how “summery” this pasta recipe is, but I first tried it when it was summer therefore it is now a summer recipe. I think it would taste equally as delicious in the Spring, Fall, and/or Winter.
Apparently, this Spicy Vodka Pasta recipe when viral when Gigi Hadid posted about it. I didn’t get in the loop until Kathleen Barnesposted about it. It is SO YUM! The only thing I change when preparing this amazing dish is swap out the shells for Fettuccine noodles. I don’t know why, but we prefer the Fettucine. Either way, the sauce is the star and you won’t be disappointed.
Another Kathleen Barnes find is this Chickpea Salad on Avocado Toast. Grant and I have made it a couple of times and it is the perfect summer lunch. Zucchini6, tomato, and garlic are all currently growing in my garden. I can’t wait to use the produce I GREW in my lunches!
The only thing I changed about the recipe is mashing the chickpeas up a bit. Otherwise, it is a little hard to keep them from rolling all over the place. You can find the whole recipe here.
3. Hello Fresh's Zucchini Ribbon Salad
We recently started a Hello Fresh subscription and one of the sides included was this Zucchini Ribbon Salad. Grant and I are obsessed with this salad. It is so simple, and so delicious.
This simple summer recipe paired great with couscous and salmon. *chef’s kiss*
Ingredients:
Directions:
Zucchini
Scallion
Tomato
Olive Oil
Lemon
Sald & Pepper
Dice tomato. Thinly slice scallion greens.
Use a peeler to shave zucchini lengthwise into ribbons. Stop once you get to the seedy core.
In a medium bowl, combine scallion greens, tomato, and zucchini ribbons. Add a large drizzle of olive oil and juice from half of the lemon.
Season with salt & pepper to taste.
4. Easy Basil Pesto
Fresh basil pesto is one of the easiest things to make. It is a regular in our dinner rotation during the summer when basil is plentiful in the garden. Here you can find the full basil pesto recipe.
5. Balsamic Vinegarette
When I planted my Spring garden it was full of lettuces, spinach, kale, etc. I loved going outside each day and picking a simple salad for lunch. However, I needed a good everyday salad dressing. So, on a salad dressing hunt I went. I wanted something easy to make that only used a handful of ingredients. I tried several different salad dressing recipes. Some were wins, others were….not wins. Finally, I found this balsamic vinegarette recipe!
