Copycat Cracker Barrel Pancakes
When you think of Cracker Barrel, what is the first thing that comes to mind? Pancakes, obviously, followed closely by seasonal tchotchkes and those triangle peg board games with the golf tees. Pancakes are definitely first though. They make some darn good pancakes.
Here is a little mystery though, why do people only go to Cracker Barrel if they are on a long road trip or if it’s a Sunday after church? Add this to the list of things that don’t make sense to me no matter how much they are explained (i.e. rainbows, water towers, earthworms, etc.).
Anyway, I am always on the hunt for a good breakfast recipe, especially a pancake recipe, and these Copycat Cracker Barrel Pancakes definitely fit the bill. I think it might be the easiest and tastiest pancake I have ever made from scratch. Only 5 ingredients and took the same amount of time as using a pancake mix. A made-from-scratch breakfast on the table in minutes – yes, please!
I made things even more fun (and tasty) by topping them with a blueberry syrup I made from the blueberries we picked last summer. Watch out, Ree Drummond, I’m practically a pioneer over here!
Homemade Blueberry Syrup
Making your own blueberry syrup is actually much easier than I once thought.
Combine 1 Tbsp of cornstarch with 2 Tbsp of water. Set aside.
Bring 2 Cups of fresh or frozen blueberries, 1/2 C water, and 1/2 C sugar to a boil over medium-high heat. Reduce heat and simmer for 10 minutes. You want the berries to soften.
Add the cornstarch mixture and continue stirring and simmering until sauce reaches desired consistency.
I also like to add a pinch of salt and a bit of lemon juice to taste.
Keeps fresh in refrigerator for 2 weeks.
Delicious on pancakes, waffles, and/or ice cream!
