Last weekend the kids and I heard a song from the Trolls movie while we were in the car. We all realized we hadn’t seen Trolls in a long time! So, it was decided that Trolls would be the next movie during our next family movie night.
I’ve been really into snack boards lately. I had been calling them “charcuterie boards” but when I found out that true charcuterie boards contain meat, “snack board” seemed more appropriate. At least more appropriate for the way I usually prepare them.
We always have some sort of snack during our movie nights. Our usual snacks consist of fruit, popcorn, and/or ice cream. Since we hadn’t had a movie night in a while I wanted to surprise the kids with a special Trolls-themed snack. What I came up with was a rainbow snack board full of fun, colorful foods! It was a huge hit!! The best part about it was that most of the rainbow snack board consisted of fruits and veggies. There were a few sugary additions, but for the most part, it was healthy!
Rainbow Snack Board
Rainbow snack boards are pretty easy to put together. The key is to have an assortment of snacks/food in a variety of colors. I’ve listed a few snack/food ideas to get your creative juices flowing, but I’ll be honest, the blue and purple category leave a lot to be desired!

It’s also fun to have a few treats that represent all of the colors! I could spend hours (and probably already have) and hours scouring Pinterest for rainbow themed treats. Here are a few of my favorites:
Cake Mix Cookies are delicious and would be a perfect addition to the Rainbow Snack board if you used rainbow jimmies.
Rainbow Cookies (pictured below) were made by using a packaged sugar cookie mix and food coloring. Make the cookie dough according to the package. Divide dough into 5 different bowls. Each bowl uses a different color of food coloring. Take a bit of dough from each color and gently roll it into a ball using your hands. Easy and so cute!
Sugared Marshmallows (pictured below) were so easy to make and a hit with my kids! Insert some type of skewer or stick into each marshmallow. Dip the marshmallow in water then gently pat any excess water off with a paper towel. Roll the marshmallow around in sanding sugar.
